Production and applications of fungal exopolysaccharides

Exopolysaccharides are polymers of monosaccharides which are secreted in the culture medium and allow for different industrial applications. There are few scientific reports on the production, characterization and applications of fungal exopolysaccharides (EPS) . Most research in the field has been concentrated on bacterial EPS, since bacteria are easier to grow. The objectives of the present work were to review the literature on fungal EPS, reporting fermentation parameters for growing fungi, and the effect of carbon source, organic and inorganic nitrogen, aeration, agitation, microelements, addition of antifoam, and factors of growth on EPS production. The methods for recovering fungal EPS as well as their characterization, some rheological properties of the culture medium, and EPS applications were also described.Downloads
