Abstract

Immobilization of S. crevísíae in vertase an both calcium and copper alginate has been curried out. The results have shown that when calcium alginate was the inert support utilized, the immobilization was loosed and that as the time went by the speed reaction of sucrose hydrolysis slowed down. However capper alginate immobilization was strong but it caused invertase denaturation.
