Avaliação nutricional e aceitabilidade de alimentos formulados utilizados em programas institucionais

Experiments were, conducted to study nutritional and sensorial aspects of one infant formula based either on banana or soy bean flour. The results of the Protein Biological quality study indicated that formulas LBM-12, cinnamon flavored, end LBM-0'3, chocolate flavored, were similar to casein in quality, and formula MB-04, banana flavored, had values, lower than casein. Sensorial tests indicated that the product LBM-Q3, chocolate flavored, had better acceptance.
