The emergence of the COVID-19 pandemic in Asia initially caused numerous restrictions to mobility and restrictive policies in countries, generating uncertainty in all sectors of human coexistence, in the agribusiness sector was no exception. Considering that Paraguay is a country that produces high-value and in-demand raw materials such as meat, the objective of this research is to assess the response of beef production before and during the pandemic. Secondary data from Paraguayan livestock and foreign trade were used, such as volume in kilograms (kg), values in dollars (US$) of bovine meat and giblets, number of cattle slaughtered from different categories for export and prices per kilogram (kg/US$) in the first semesters of 2019, 2020 and 2021, were collected from the website of the SENACSA and submitted to one-way analysis of variance. Exports of meat and offal in volume and value obtained were significantly higher in the first half of 2021 compared to the same period of 2019 and 2020, this increase reflects the greater number of animals slaughtered in 2021. Paraguayan productive sector is responding to the demands for external meat with a significant increase in slaughtered animals, although this raises doubts about the sustainability of production if this level of slaughter is maintained, especially of females.
